Executive Chef Stanton "Stan" Caldwell
Stanton "Stan" Caldwell was promoted to executive chef for the Imperial Palace Las Vegas and neighboring Bill's Gamblin' Hall & Saloon in February 2008. He joined the Imperial Palace in September 2003 as the assistant executive chef and transferred to Bill's as the executive sous chef in August 2007.
Chef Stan began his illustrious culinary career in 1983, as a chef garde-manger for the MGM Grand Reno in Nevada. In 1995, he moved to the MGM Grand in Las Vegas as chef de cuisine working in the steakhouse, room service mansion and Studio Cafe.
Chef Stan took off for Connecticut from 2001-2003 as an executive sous chef for the Mohegan Sun and opened the resort's new addition, which included 29 restaurants, four VIP lounges, 100,000 square feet of convention space and a 12,000-seat sports arena. From that experience, he brought back to Las Vegas a mix of New England and East Coast culinary fusion, which he has integrated into his current menus.
Along the way, he has won many food competition medals and ice sculpting championships. In addition, he has worked on the Food Network, PBS, and has done more than 50 live exhibition cooking shows.
